Ingredients
- 300g Arborio rice
- 500g mixed seafood (shrimp, scallops, and mussels)
- 1 shallot, finely chopped
- 2 cloves of garlic, minced
- 1 liter fish or vegetable stock
- 200ml dry white wine
- 50g unsalted butter
- 50g Parmesan cheese, grated
- 1 tablespoon olive oil
- Fresh parsley, chopped, for garnish
- Salt and pepper to taste
Instructions:
- Heat the olive oil and half of the butter in a large pan over medium heat. Add the shallot and garlic, and sauté until soft and fragrant.
- Add the Arborio rice to the pan and stir to coat the grains in the butter and oil. Cook for 2-3 minutes until the rice is lightly toasted.
- Pour in the white wine and cook until it has evaporated, stirring constantly.
- Gradually add the fish or vegetable stock, one ladleful at a time, stirring frequently and allowing the liquid to be absorbed before adding more. Continue this process for about 15-20 minutes, or until the rice is creamy and al dente.
- In a separate pan, melt the remaining butter over medium-high heat. Add the mixed seafood (shrimp, scallops, and mussels) and cook for 2-3 minutes until they are cooked through and have a golden crust.
- Gently fold the cooked seafood into the risotto, reserving some for garnish. Stir in the grated Parmesan cheese and season with salt and pepper to taste.
- Remove the risotto from the heat and let it rest for a few minutes.
- Serve the seafood risotto hot, garnished with the reserved seafood, chopped parsley, and a sprinkle of Parmesan cheese.
