Seafood Risotto with Shrimp, Scallops, and Mussels

Seafood Risotto

Ingredients 

  • 300g Arborio rice
  • 500g mixed seafood (shrimp, scallops, and mussels)
  • 1 shallot, finely chopped
  • 2 cloves of garlic, minced
  • 1 liter fish or vegetable stock
  • 200ml dry white wine
  • 50g unsalted butter
  • 50g Parmesan cheese, grated
  • 1 tablespoon olive oil
  • Fresh parsley, chopped, for garnish
  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil and half of the butter in a large pan over medium heat. Add the shallot and garlic, and sauté until soft and fragrant.  
  2. Add the Arborio rice to the pan and stir to coat the grains in the butter and oil. Cook for 2-3 minutes until the rice is lightly toasted.  
  3. Pour in the white wine and cook until it has evaporated, stirring constantly.  
  4. Gradually add the fish or vegetable stock, one ladleful at a time, stirring frequently and allowing the liquid to be absorbed before adding more. Continue this process for about 15-20 minutes, or until the rice is creamy and al dente.  
  5. In a separate pan, melt the remaining butter over medium-high heat. Add the mixed seafood (shrimp, scallops, and mussels) and cook for 2-3 minutes until they are cooked through and have a golden crust.  
  6. Gently fold the cooked seafood into the risotto, reserving some for garnish. Stir in the grated Parmesan cheese and season with salt and pepper to taste.  
  7. Remove the risotto from the heat and let it rest for a few minutes.  
  8. Serve the seafood risotto hot, garnished with the reserved seafood, chopped parsley, and a sprinkle of Parmesan cheese.
