  • 1 bunch of fresh asparagus (250g)
  • 100g breadcrumbs
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme leaves
  • 1 garlic clove, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Lemon wedges for serving

Recipe Instructions for White Fish Asparagus Bake:

  • Preheat oven to 200°C (392°F). Grease a baking dish.
  • Trim the woody ends of the asparagus and place them on one side of the dish. Drizzle with olive oil, salt, and pepper.
  • Mix breadcrumbs, parsley, thyme, garlic, salt, pepper, and 1 tbsp olive oil in a bowl.
  • Pat dry fish fillets, then brush with the remaining olive oil.
  • Press the herbed breadcrumb mixture onto the top of each fillet firmly.
  • Place fish fillets on the other side of the baking dish.
  • Bake for 15-18 minutes until the fish flakes easily and the asparagus is tender.
