Ingredients (Metric):

  • 300g firm tofu, cubed
  • 150g broccoli florets
  • 100g sliced carrots
  • 100g bell peppers, diced
  • 50g sliced mushrooms
  • 2 tbsp sesame oil
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 2 garlic cloves, minced
  • 1 tsp grated ginger
  • 1 tsp cornstarch
  • 2 tbsp water
  • Sesame seeds for garnish
  • Cooked rice, to serve

Preparation time: 15 minutes Cooking time: 20 minutes Servings: 2 Calories per serving: ~350 kcal

Instructions:

  1. Mix soy sauce, honey, rice vinegar, garlic, and ginger to make the teriyaki sauce.
  2. Marinate tofu in 1/3 of the sauce for 10 mins.
  3. Heat sesame oil in a pan, sauté tofu until golden. Set aside.
  4. Stir-fry veggies until tender-crisp.
  5. Add tofu and the remaining sauce. Simmer.
  6. Mix cornstarch and water, and add to thicken the sauce.
  7. Sprinkle sesame seeds and serve over rice. Enjoy!
