Lamb Stuffed Eggplants

Ingredients

For the Eggplants:

  • 4 medium eggplants
  • 2 tbsp olive oil
  • Salt and pepper to taste

For the Filling:

  • 400g minced lamb
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 large tomato, chopped
  • 2 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground allspice
  • 1/4 tsp cayenne pepper
  • 50g pine nuts, toasted
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

For the Topping:

  • 100g feta cheese, crumbled
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Eggplants:
    1. Preheat oven to 200°C (392°F).
    2. Cut eggplants in half lengthwise and scoop out the flesh, leaving a 1 cm thick shell. Reserve the flesh.
    3. Brush the eggplant shells with olive oil, season with salt and pepper, and place them on a baking sheet.
    4. Roast in the oven for 20 minutes or until tender.
  2. Prepare the Filling:
    1. Chop the reserved eggplant flesh.
    2. Heat a tablespoon of olive oil in a large skillet over medium heat. Add the onions and garlic, sauté until translucent.
    3. Add the minced lamb and cook until browned.
    4. Stir in the chopped eggplant flesh, bell pepper, tomato, and tomato paste. Cook for another 5 minutes.
    5. Add the spices (cumin, coriander, cinnamon, allspice, cayenne), and season with salt and pepper. Mix well.
    6. Remove from heat and stir in the toasted pine nuts and fresh parsley.
  3. Stuff the Eggplants:
    1. Fill the roasted eggplant shells with the lamb mixture.
    2. Top with crumbled feta cheese.
    3. Return to the oven and bake for an additional 15 minutes until the cheese is slightly golden.
  4. Serve:
    1. Garnish with fresh parsley.
    2. Serve hot with a side of couscous or a fresh green salad.
