Ingredients
For the Eggplants:
- 4 medium eggplants
- 2 tbsp olive oil

- 400g minced lamb

- 1 large tomato, chopped
- 2 tbsp tomato paste
- 1 tsp ground cumin

- 50g pine nuts, toasted
- 2 tbsp fresh parsley, chopped

Instructions
- Prepare the Eggplants:
- Preheat oven to 200°C (392°F).
- Cut eggplants in half lengthwise and scoop out the flesh, leaving a 1 cm thick shell. Reserve the flesh.
- Brush the eggplant shells with olive oil, season with salt and pepper, and place them on a baking sheet.
- Roast in the oven for 20 minutes or until tender.
- Prepare the Filling:
- Chop the reserved eggplant flesh.
- Heat a tablespoon of olive oil in a large skillet over medium heat. Add the onions and garlic, sauté until translucent.
- Add the minced lamb and cook until browned.

- Remove from heat and stir in the toasted pine nuts and fresh parsley.
- Stuff the Eggplants:
- Fill the roasted eggplant shells with the lamb mixture.
- Top with crumbled feta cheese.
- Return to the oven and bake for an additional 15 minutes until the cheese is slightly golden.
- Serve:
- Garnish with fresh parsley.
- Serve hot with a side of couscous or a fresh green salad.
