  • – 1/4 teaspoon black pepper
  • – 1 cup chicken broth
  • – 1/2 cup shredded cheese (vegans can change this out for vegan cheese)
  • – 1/4 cup chopped fresh cilantro
  • – 1/4 cup sour cream (vegans can change this out for the vegan cream of their choice)
  • – avocado, parsley, cilantro, or the topping of your choice.

Instructions for cooking:

1. Place chicken breasts in the bottom of the Instant Pot.
2. Add the rice, black beans, diced tomatoes, frozen corn, chili powder, cumin, garlic powder, onion powder, paprika, salt, pepper, and chicken broth.
3. Secure the lid and set the valve to sealing.
4. Cook on high pressure for 8 minutes.
5. Quickly release the pressure and remove the lid.
6. Remove the chicken breasts and shred them with two forks.
7. Return the chicken to the pot and stir to combine.
8. Top with shredded cheese, cilantro, and sour cream.
